“The premise is simple: The underrated wine bar in Coral Gables wants to push the envelope while flipping the idea that the chef is king on its head. And what better way than to eat a delectable three-course meal with six wine pairings from two of the city’s best enophiles?”
The spirit of competition fills the air. Heath Porter sits at a dining table in Uvaggio’s Miracle Mile location mulling over his final wine selections to be paired with the following night’s three course dinner; His challenger undoubtedly doing the same elsewhere. A fun sort of anxiety has built as ingredients have been studied and wines sampled. Only time will reveal whether or not Uvaggio’s sommelier’s unbeaten Somm Slam streak will continue.
Uvaggio’s Somm Slam is a one of a kind experience. The showdown, dreamt up by the wine bar’s co-founders Heath Porter and Craig DeWald, offers guests a fun-filled night of gourmet foods, gracious company and unique wines. The contest features Uvaggio’s in-house Wine-O extraordinaire Heath Porter competing alongside a top-class guest sommelier competitor and revolves around a three course dinner whipped up by Head Chef, Gil Tanner, and the competing group’s culinary maestro.
Competing sommeliers must pair each course with a wine, but there’s a twist: They only know the ingredients of the dishes ahead of time! This leaves the wine whizzes to rely on their knowledge of complimentary flavors and imaginative perception to predict how the ingredients might be implemented behind kitchen doors. After each dish, Somm Slam attendees raise one of two paddles to vote on their preferred pairing. Votes are then tallied to determine the round’s winner. Plenty of lighthearted jabs are traded, and antics ensue throughout the contest until the final vote of the night is in and a champion named. To the victor belong the spoils (in this case a giant trophy and bragging rights) until the next chapter of Uvaggio’s Somm Slam.
